Traditional escargots are typically filled with heavy garlic butter. To pair them with Hermit Gin, we recommend a lighter, coastal-inspired filling instead. The gin features botanicals like juniper, coriander, citrus, and a hint of seawater. Echoing these elements in the butter filling creates a harmonious flavor profile.

  • Butter: Unsalted and softened at room temperature.

Step-by-Step Guide: How to Fill the Escargots
  1. Mix the butter: Blend the softened butter with the citrus zest, finely chopped fennel or dill, a minced shallot, crushed coriander seeds, and sea salt. Add a few drops of Hermit Gin for a direct flavor connection.
  2. Prepare the shells: Ensure the escargot shells are clean and dry. If using canned escargots, rinse them briefly and drain well.
  3. Add the first layer of butter: Use a small knife or a pastry bag to push a small dollop of the herb butter deep into the empty shell.
  4. Insert the snail: Gently push the escargot into the shell on top of the first layer of butter.
